Here’s a fun and easy Mini Snacks Recipe — bite-sized, tasty, and perfect for parties, lunchboxes, or quick munchies!


Mini Cheese & Veggie Cups

Servings: 12 mini snacks
Prep Time: 10 minutes
Cook Time: 12–15 minutes
Total Time: ~25 minutes


Ingredients

  • 1 cup shredded cheese (cheddar, mozzarella, or mix)
  • 2 eggs
  • 1 cup finely chopped veggies (bell peppers, spinach, onion, corn, etc.)
  • ½ cup breadcrumbs or crushed crackers
  • Salt & pepper to taste
  • Optional: a pinch of garlic powder or Italian seasoning

Instructions

  1. Preheat oven to 375°F (190°C). Grease a mini muffin pan.
  2. In a bowl, whisk eggs, then stir in cheese, veggies, crumbs, and seasoning.
  3. Spoon mixture into mini muffin cups, filling about ¾ full.
  4. Bake for 12–15 minutes or until set and golden on top.
  5. Cool slightly before removing from the pan.

Variations

  • Add diced cooked chicken, ham, or bacon.
  • Use cooked quinoa or rice instead of breadcrumbs for a gluten-free version.
  • Swap in mini tortillas or puff pastry to make mini cups instead.
