Mini Cheese & Veggie Cups

Ingredients
- 1 cup shredded cheese (cheddar, mozzarella, or mix)
- 2 eggs
- 1 cup finely chopped veggies (bell peppers, spinach, onion, corn, etc.)
- ½ cup breadcrumbs or crushed crackers
- Salt & pepper to taste
- Optional: a pinch of garlic powder or Italian seasoning
Instructions
- Preheat oven to 375°F (190°C). Grease a mini muffin pan.
- In a bowl, whisk eggs, then stir in cheese, veggies, crumbs, and seasoning.
- Spoon mixture into mini muffin cups, filling about ¾ full.
- Bake for 12–15 minutes or until set and golden on top.
- Cool slightly before removing from the pan.
