Sugar-Free Vanilla Muffins

 








Ingredients:


2 cups almond flour ๐ŸŒฐ


1/3 cup erythritol (or preferred sweetener) ๐Ÿฏ


1 tsp baking powder ๐Ÿฅ„


1/4 tsp salt ๐Ÿง‚


3 eggs ๐Ÿฅš๐Ÿฅš๐Ÿฅš


1/3 cup unsweetened almond milk ๐Ÿฅ›


1/4 cup melted butter ๐Ÿงˆ


1 tsp vanilla extract ๐ŸŒฟ



Instructions:


1️⃣ Preheat oven to 350°F (175°C) ๐Ÿ”ฅ. Line a muffin tin with cupcake liners.

2️⃣ In a bowl, whisk together almond flour, sweetener, baking powder, and salt. ๐Ÿฅ„

3️⃣ In another bowl, beat eggs, almond milk, melted butter, and vanilla extract. ๐Ÿฅฃ

4️⃣ Combine wet and dry ingredients, mixing until smooth.

5️⃣ Spoon the batter into the muffin cups, filling each about 3/4 full. ๐Ÿถ

6️⃣ Bake for 18-22 minutes or until golden brown. ๐Ÿ”ฅ
