Ingredients

  • 2 cups mashed potatoes (leftovers work great!)
  • 2 large eggs
  • 1 cup shredded cheddar cheese (or your favorite)
  • ¼ cup chopped green onions or chives (optional)
  • Salt and pepper to taste
  • ¼ cup milk or sour cream (optional, for creaminess)
  • Butter or nonstick spray (for greasing the muffin tin)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a muffin tin well.
  2. In a mixing bowl, combine mashed potatoes, eggs, cheese, green onions, salt, pepper, and milk or sour cream if using.
  3. Spoon the mixture into the muffin cups, filling nearly to the top.
