Ingredients:
- 2 cups mashed potatoes (leftover or freshly made)
- 1 cup shredded cheddar cheese (or cheese of choice)
- 2 eggs (beaten)
- 1/4 cup milk
- 1/4 cup chopped green onions (optional)
- 1/4 tsp garlic powder
- 1/4 tsp salt (adjust based on your mashed potatoes)
- 1/4 tsp black pepper
- 6 whole eggs (for the centers, optional but delicious)
- Non-stick spray or butter (for greasing the muffin tin)
Instructions:

Preheat oven to 375°F (190°C). Grease a 6- or 12-cup muffin tin well.
