Ingredients
2 cups shredded coconut (unsweetened or sweetened)
1 cup sweetened condensed milk (homemade or store-bought)
1 teaspoon vanilla extract
1 cup dark or milk chocolate (chopped or chocolate chips)
1 tablespoon coconut oil (optional, for smooth melting)
Instructions
1. Make the Coconut Mixture:
In a bowl, mix shredded coconut, sweetened condensed milk, and vanilla extract.
Stir until well combined and sticky.
2. Form the Balls:
Scoop out small portions and roll into bite-sized balls.
Place them on a parchment-lined tray.
Freeze for 15-20 minutes to firm up.
3. Melt the Chocolate:
In a microwave or double boiler, melt the chocolate with coconut oil (if using) until smooth.
4. Coat the Balls:
Dip each coconut ball into the melted chocolate, using a fork to coat evenly.
Place back on the tray and let excess chocolate drip off.
