TROPICAL VEGETABLE FRUIT CAKE
INGREDIENTS:
- 1 cup grated carrots
- 1 cup grated pumpkin or sweet potato
- 1/2 cup raisins
- 1/2 cup chopped nuts (optional)
- 1 cup all-purpose flour
- 1/2 cup sugar (adjust to taste)
- 2 eggs
- 1/2 cup oil or melted butter
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp baking powder
- Pinch of salt
INSTRUCTIONS:
- Preheat oven to 350°F (175°C). Grease a round cake tin.
- In a large bowl, mix:
- Grated carrots
- Grated pumpkin or sweet potato
- Raisins
- Nuts (if using)
- In another bowl, beat together:
- Eggs
- Sugar
- Oil or butter
- Vanilla
- In a separate bowl, combine dry ingredients:
- Flour
- Baking powder
- Salt
- Cinnamon
- Nutmeg
- Mix wet and dry ingredients together.
- Fold in the vegetable and fruit mixture.
- Pour into cake tin and bake for 45–60 minutes, or until a toothpick comes out clean.
- Cool, slice, and enjoy!
