PINEAPPLE COCONUT
GOD BLESS AMERICA CAKE
INGREDIENTS
- 1 (20 oz.) can crushed pineapple (with juice)
- 2 large eggs
- 1/4 cup vegetable oil
- 1 cup sugar
- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup shredded coconut
- 1/2 cup chopped pecans or walnuts (optional)
FROSTING (Optional but delicious!)
- 1/2 cup butter
- 1/2 cup sugar
- 1/2 cup evaporated milk
- 1/2 cup shredded coconut
- 1/2 cup chopped nuts
- 1 tsp vanilla extract
INSTRUCTIONS
- Preheat oven to 350°F (175°C).
- In a bowl, mix crushed pineapple (with juice), eggs, oil, and sugar.
- Stir in flour, baking soda, and salt until combined.
- Fold in shredded coconut and nuts.
- Pour batter into a greased 9x13-inch baking dish.
- Bake for 30–35 minutes, or until golden brown and a toothpick comes out clean.
FOR THE FROSTING:
- In a saucepan, combine butter, sugar, and evaporated milk.
- Bring to a boil over medium heat, stirring constantly.
- Boil for 3–5 minutes, then remove from heat.
- Stir in coconut, nuts, and vanilla.
- Pour warm frosting over warm cake.
