NEW YORK-STYLE CHEESECAKE
INGREDIENTS
CRUST (OPTIONAL):
- 1½ CUPS GRAHAM CRACKER CRUMBS
- ¼ CUP GRANULATED SUGAR
- ½ CUP UNSALTED BUTTER, MELTED
FILLING:
- 4 PACKAGES (8 OZ EACH) CREAM CHEESE, SOFTENED
- 1¼ CUPS GRANULATED SUGAR
- 1 TEASPOON VANILLA EXTRACT
- 4 LARGE EGGS
- ⅔ CUP SOUR CREAM
- ⅔ CUP HEAVY CREAM
- 1 TABLESPOON ALL-PURPOSE FLOUR (OPTIONAL)
INSTRUCTIONS

PREHEAT OVEN TO 325°F (163°C)
GREASE A 9-INCH SPRINGFORM PAN. -
MAKE CRUST (OPTIONAL):
MIX GRAHAM CRUMBS, SUGAR, AND MELTED BUTTER.
PRESS INTO BOTTOM OF PAN.
BAKE FOR 10 MINUTES. LET COOL. -
MAKE FILLING:
BEAT CREAM CHEESE UNTIL SMOOTH.
ADD SUGAR & VANILLA. MIX WELL.
ADD EGGS ONE AT A TIME. MIX GENTLY.
ADD SOUR CREAM, HEAVY CREAM, AND FLOUR.
MIX UNTIL SMOOTH. -
BAKE:
POUR FILLING INTO PAN.
TAP PAN TO REMOVE AIR BUBBLES.
BAKE 1 HOUR TO 1 HOUR 10 MINUTES.
CENTER SHOULD BE SLIGHTLY JIGGLY. -
COOL:
TURN OFF OVEN, CRACK DOOR OPEN.
LET SIT IN OVEN FOR 1 HOUR.
THEN COOL ON COUNTER.
CHILL IN FRIDGE AT LEAST 4 HOURS OR OVERNIGHT.
