🍍🍚 Hawaiian Fried Rice – Sweet, Savory, and Better Than Takeout! πŸ”₯πŸ₯’

Ingredients:

  • 2 cups cooked rice (day-old works best)
  • 1 cup diced pineapple (fresh or canned, drained)
  • 1/2 cup diced ham (or spam, bacon, or chicken)
  • 1/2 cup peas and carrots (frozen mix works)
  • 2 green onions, sliced
  • 2 eggs, lightly beaten
  • 2–3 tbsp soy sauce
  • 1 tbsp sesame oil (or vegetable oil)
  • 1 clove garlic, minced
  • Optional: pinch of chili flakes or sriracha for heat

Instructions:

  1. Heat oil in a large skillet or wok over medium-high heat. Add garlic and cook for 30 seconds.
  2. Scramble eggs in the pan and cook until just set. Remove and set aside.
  3. Add ham and cook until lightly browned, then toss in peas and carrots.
  4. Stir in rice and pineapple. Cook 2–3 minutes, letting the rice get a little crispy.
  5. Season with soy sauce and optional chili flakes. Return eggs to the pan and mix everything together.
  6. Top with green onions, and serve hot—straight from the pan or in a pineapple bowl for extra flair!

Let me know if you want a vegetarian version or how to make it meal-prep friendly!
