CRISPY BAKED POTATO WITH BUTTER AND CHIVES
INGREDIENTS:
- 2 LARGE RUSSET POTATOES
- OLIVE OIL
- SALT (KOSHER OR SEA SALT)
- BLACK PEPPER
- 2 TBSP BUTTER (OR MORE)
- CHOPPED CHIVES OR GREEN ONIONS
INSTRUCTIONS:
1. PREHEAT OVEN TO 400°F (200°C).
2. WASH AND DRY THE POTATOES.
SCRUB WELL AND PAT DRY. PRICK EACH POTATO WITH A FORK SEVERAL TIMES.
3. RUB WITH OLIVE OIL AND SPRINKLE WITH SALT.
4. BAKE DIRECTLY ON THE OVEN RACK
BAKE FOR 45 TO 60 MINUTES, UNTIL SKIN IS CRISP AND INSIDE IS TENDER.
5. SLICE OPEN AND FLUFF INSIDE WITH A FORK.
6. ADD BUTTER, CHIVES, SALT, AND PEPPER TO TASTE.
OPTIONAL TOPPINGS:
- SOUR CREAM
- SHREDDED CHEESE
- BACON BITS
- CHILI
