CREAMY VEGETABLE SOUP
INGREDIENTS:
- 2 TABLESPOONS BUTTER
- 1 ONION, CHOPPED
- 2 GARLIC CLOVES, MINCED
- 3 POTATOES, PEELED & DICED
- 2 CUPS BROCCOLI OR CAULIFLOWER (CHOPPED)
- 4 CUPS VEGETABLE BROTH
- 1 CUP MILK OR CREAM
- SALT AND PEPPER TO TASTE
DIRECTIONS:
- MELT BUTTER IN A POT. ADD ONION AND GARLIC. COOK UNTIL SOFT.
- ADD POTATOES AND BROCCOLI. COOK FOR 5 MINUTES.
- ADD BROTH. BRING TO A BOIL. THEN SIMMER FOR 20 MINUTES.
- BLEND THE SOUP UNTIL SMOOTH.
- ADD MILK OR CREAM. STIR WELL.
- SEASON WITH SALT AND PEPPER. SERVE WARM.
FLUFFY PANCAKES
INGREDIENTS:
- 1 CUP FLOUR
- 1 TABLESPOON SUGAR
- 1 TEASPOON BAKING POWDER
- 1/2 TEASPOON BAKING SODA
- 1/4 TEASPOON SALT
- 1 CUP BUTTERMILK (OR 1 CUP MILK + 1 TSP VINEGAR)
- 1 EGG
- 2 TABLESPOONS MELTED BUTTER
DIRECTIONS:
- MIX FLOUR, SUGAR, BAKING POWDER, BAKING SODA, AND SALT.
- IN ANOTHER BOWL, WHISK BUTTERMILK, EGG, AND MELTED BUTTER.
- COMBINE WET AND DRY MIXTURES. DO NOT OVERMIX.
- HEAT A NONSTICK PAN. LIGHTLY GREASE IT.
- POUR BATTER TO FORM PANCAKES.
- COOK UNTIL BUBBLES FORM, THEN FLIP. COOK UNTIL GOLDEN.
