CREAMY VEGETABLE SOUP

INGREDIENTS:

  • 2 TABLESPOONS BUTTER
  • 1 ONION, CHOPPED
  • 2 GARLIC CLOVES, MINCED
  • 3 POTATOES, PEELED & DICED
  • 2 CUPS BROCCOLI OR CAULIFLOWER (CHOPPED)
  • 4 CUPS VEGETABLE BROTH
  • 1 CUP MILK OR CREAM
  • SALT AND PEPPER TO TASTE

DIRECTIONS:

  1. MELT BUTTER IN A POT. ADD ONION AND GARLIC. COOK UNTIL SOFT.
  2. ADD POTATOES AND BROCCOLI. COOK FOR 5 MINUTES.
  3. ADD BROTH. BRING TO A BOIL. THEN SIMMER FOR 20 MINUTES.
  4. BLEND THE SOUP UNTIL SMOOTH.
  5. ADD MILK OR CREAM. STIR WELL.
  6. SEASON WITH SALT AND PEPPER. SERVE WARM.

FLUFFY PANCAKES

INGREDIENTS:

  • 1 CUP FLOUR
  • 1 TABLESPOON SUGAR
  • 1 TEASPOON BAKING POWDER
  • 1/2 TEASPOON BAKING SODA
  • 1/4 TEASPOON SALT
  • 1 CUP BUTTERMILK (OR 1 CUP MILK + 1 TSP VINEGAR)
  • 1 EGG
  • 2 TABLESPOONS MELTED BUTTER

DIRECTIONS:

  1. MIX FLOUR, SUGAR, BAKING POWDER, BAKING SODA, AND SALT.
  2. IN ANOTHER BOWL, WHISK BUTTERMILK, EGG, AND MELTED BUTTER.
  3. COMBINE WET AND DRY MIXTURES. DO NOT OVERMIX.
  4. HEAT A NONSTICK PAN. LIGHTLY GREASE IT.
  5. POUR BATTER TO FORM PANCAKES.
  6. COOK UNTIL BUBBLES FORM, THEN FLIP. COOK UNTIL GOLDEN.
