Classic Vanilla Butter Cake

Ingredients:

  • 2 ½ cups all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tbsp pure vanilla extract
  • 1 cup whole milk

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x13-inch pan or two 9-inch round cake pans.
  2. In a bowl, sift together flour, baking powder, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy (about 3–4 minutes).
  4. Add eggs one at a time, beating well after each. Stir in the vanilla.
  5. Alternately add dry ingredients and milk, beginning and ending with flour mixture. Mix just until combined.
  6. Pour batter into prepared pan(s) and smooth the top.
  7. Bake 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack.

Warm Buttermilk Sauce

Ingredients:

  • 1 cup buttermilk
  • ½ cup unsalted butter
  • 1 cup sugar
  • 1 tsp baking soda
  • 1 tsp vanilla extract

Instructions:

  1. In a medium saucepan, combine buttermilk, butter, sugar, and baking soda.
  2. Bring to a gentle boil over medium heat, stirring constantly. The mixture will foam up — keep stirring!
  3. Simmer gently for 5–7 minutes until slightly thickened and golden.
  4. Remove from heat, stir in vanilla extract.
  5. Serve warm, poured over slices of vanilla butter cake.
