Classic Shortbread Cookies

Ingredients:

  • 1 cup (225g) unsalted butter, softened
  • 1/2 cup (60g) powdered sugar
  • 2 cups (240g) all-purpose flour
  • 1/4 tsp salt
  • 1 tsp vanilla extract (optional)

Instructions:

  1. Cream the butter & sugar:
    In a bowl, beat the softened butter and powdered sugar until light and fluffy.

  2. Add flour & salt:
    Gradually mix in the flour and salt. Add vanilla if using. Mix until a soft dough forms.

  3. Shape the dough:
    Roll the dough out on a lightly floured surface to about 1/2 inch thick.
    Use a round cutter or shape by hand. Place on a baking sheet lined with parchment paper.

  4. Chill (optional but helps):
    Chill the cookies in the fridge for 15–30 minutes to help them hold shape.

  5. Bake:
    Preheat oven to 160°C (320°F). Bake for 15–20 minutes or until just lightly golden around the edges.

  6. Cool & serve:
    Let cool completely before serving. Store in an airtight container.
