CARAMELIZED ROASTED SWEET POTATOES
INGREDIENTS:
- 3 LARGE SWEET POTATOES (peeled and diced)
- 2–3 TBSP OLIVE OIL OR MELTED BUTTER
- 2 TBSP HONEY OR BROWN SUGAR
- 1 TSP CINNAMON (optional)
- 1/2 TSP SALT
- 1/4 TSP BLACK PEPPER
INSTRUCTIONS:

PREHEAT OVEN TO 200°C (400°F).

PEEL AND DICE SWEET POTATOES into 1-inch chunks.

PLACE POTATOES IN A LARGE BOWL.

ADD OIL/BUTTER, HONEY/SUGAR, CINNAMON (OPTIONAL), SALT, AND PEPPER.

TOSS WELL TO COAT EVENLY.

SPREAD POTATOES ON A BAKING SHEET IN A SINGLE LAYER.

ROAST FOR 25–35 MINUTES, FLIPPING HALFWAY THROUGH.

COOK UNTIL GOLDEN BROWN AND CRISPY ON THE EDGES.
