Ingredients:

  • 🐟 500g catfish (or any firm fish), cut into chunks

  • 🥥 1/2 cup coconut water (or plain water)
  • 🌿 Scallions (cut into 2-inch pieces)

Instructions:

  1. Make the Caramel 🍯
    Heat 1 tbsp sugar + 1 tbsp oil in a pot until golden brown (don’t burn it!).

  2. Add Aromatics 🌰
    Toss in garlic and shallots. Sauté until fragrant.

  3. Add Fish 🐟
    Gently lay the fish into the pot. Add fish sauce, soy sauce, pepper, and chili.

  4. Simmer 🔥
    Pour in coconut water. Let it boil, then simmer on low for 30–45 minutes until thick and rich.

  5. Finish with Scallions 🌿
    Add scallions in the last 5 minutes.

  6. Serve & Enjoy 🍚
    Best with steamed rice!
