Taco Pasta Casserole Recipe
Ingredients:
12 oz pasta (rotini, penne, or shells)
1 lb ground beef (or turkey)
1 small onion, diced
2 cloves garlic, minced
1 packet taco seasoning (or homemade)
1 can (10 oz) diced tomatoes with green chilies (like Rotel)
1 can (8 oz) tomato sauce
½ cup water
1 cup corn (optional)
1 can (15 oz) black beans, drained & rinsed (optional)
2 cups shredded cheese (cheddar, Mexican blend, or your favorite)
½ cup sour cream (optional, for creaminess)
Tortilla chips or crushed Doritos for topping (optional)
Chopped cilantro or green onions for garnish
Instructions:
1. Cook the Pasta: Boil pasta according to package directions until al dente. Drain and set aside.
2. Brown the Meat: In a large skillet over medium heat, cook ground beef with diced onion until browned. Drain excess grease.
3. Add Seasonings & Sauce: Stir in garlic, taco seasoning, diced tomatoes, tomato sauce, and water. Let it simmer for 5 minutes.
4. Mix in Extras: Add corn, black beans (if using), and sour cream. Stir well.
5. Combine: Mix in the cooked pasta and 1 cup of cheese.
6. Bake: Pour into a greased 9x13" baking dish. Top with remaining cheese and crushed tortilla chips (if using).
7. Broil or Bake: Bake at 375°F (190°C) for 15 minutes or broil for 3-5 minutes until the cheese is bubbly.
8. Serve: Garnish with cilantro or green onions. Serve with extra chips, sour cream, or salsa if desired.
