The Enchanted Plum Cake

A rich, spiced plum cake with a magical touch—perfect for special occasions or a cozy evening treat!

Ingredients:

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp cardamom (optional, for a magical touch)
  • ½ cup unsalted butter, softened
  • ¾ cup brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • ½ cup buttermilk (or milk + 1 tsp vinegar)
  • 4-5 fresh plums, pitted and sliced
  • ¼ cup honey or maple syrup (for caramelizing plums)
  • ¼ cup chopped walnuts or almonds (optional)

Instructions:

  1. Preheat Oven & Prepare Pan:

    • Preheat your oven to 350°F (175°C).
    • Grease and line an 8-inch round cake pan.
  2. Caramelize the Plums:

    • In a small pan, heat honey or maple syrup over medium heat.
    • Add sliced plums and cook for 2-3 minutes until softened. Set aside.
  3. Mix Dry Ingredients:

    • In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cardamom.
  4. Cream Butter & Sugar:

    • In a separate bowl, beat butter and brown sugar until fluffy.
    • Add eggs one at a time, beating well after each.
    • Stir in vanilla extract.
  5. Combine Wet & Dry Ingredients:

    • Alternate adding dry ingredients and buttermilk to the butter mixture, mixing until just combined.
  6. Assemble & Bake:

    • Pour half of the batter into the cake pan.
    • Arrange caramelized plums on top.
    • Pour the remaining batter over the plums and spread evenly.
    • Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool & Serve:

    • Let the cake cool for 10 minutes before inverting onto a plate.
    • Garnish with powdered sugar or a drizzle of honey for an extra enchanted touch!
