The Enchanted Plum Cake ✨
A rich, spiced plum cake with a magical touch—perfect for special occasions or a cozy evening treat!
Ingredients:
- 2 cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 tsp cinnamon
- ½ tsp nutmeg
- ¼ tsp cardamom (optional, for a magical touch)
- ½ cup unsalted butter, softened
- ¾ cup brown sugar
- 2 eggs
- 1 tsp vanilla extract
- ½ cup buttermilk (or milk + 1 tsp vinegar)
- 4-5 fresh plums, pitted and sliced
- ¼ cup honey or maple syrup (for caramelizing plums)
- ¼ cup chopped walnuts or almonds (optional)
Instructions:

Preheat Oven & Prepare Pan:
- Preheat your oven to 350°F (175°C).
- Grease and line an 8-inch round cake pan.

Caramelize the Plums:
- In a small pan, heat honey or maple syrup over medium heat.
- Add sliced plums and cook for 2-3 minutes until softened. Set aside.

Mix Dry Ingredients:
- In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cardamom.

Cream Butter & Sugar:
- In a separate bowl, beat butter and brown sugar until fluffy.
- Add eggs one at a time, beating well after each.
- Stir in vanilla extract.

Combine Wet & Dry Ingredients:
- Alternate adding dry ingredients and buttermilk to the butter mixture, mixing until just combined.

Assemble & Bake:
- Pour half of the batter into the cake pan.
- Arrange caramelized plums on top.
- Pour the remaining batter over the plums and spread evenly.
- Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.

- Let the cake cool for 10 minutes before inverting onto a plate.
