Smothered Chicken with Creamed Spinach, Bacon, and Mushrooms Recipe

 











Ingredients


For the Chicken:


4 boneless, skinless chicken breasts


Salt and pepper, to taste


1 tablespoon olive oil


1 tablespoon butter


1 teaspoon garlic powder


1 teaspoon onion powder



For the Creamed Spinach, Bacon, and Mushrooms:


4 slices bacon, chopped


1 tablespoon butter


1 cup mushrooms, sliced


2 garlic cloves, minced


4 cups fresh spinach


1 cup heavy cream


½ cup grated Parmesan cheese


Salt and pepper, to taste


½ teaspoon crushed red pepper flakes (optional for heat)



Instructions


1. Prepare the Chicken:


Season the chicken breasts with salt, pepper, garlic powder, and onion powder.


Heat olive oil and butter in a large skillet over medium heat.


Cook the chicken breasts for 6-7 minutes on each side, or until golden brown and cooked through. Remove from the pan and set aside.




2. Prepare the Creamed Spinach, Bacon, and Mushrooms:


In the same skillet, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving a little bacon grease in the pan.


Add butter to the skillet and sauté the sliced mushrooms for 4-5 minutes, until softened.


Add minced garlic and cook for another minute until fragrant.


Add fresh spinach and cook until wilted.


Pour in the heavy cream and bring to a simmer. Let it cook for 3-4 minutes, until slightly thickened.


Stir in Parmesan cheese, salt, pepper, and crushed red pepper flakes (if using).


Return the cooked bacon to the skillet and mix everything together.




3. Assemble the Dish:


Place the cooked chicken breasts back into the skillet with the creamed spinach mixture.


Spoon the creamy spinach, mushrooms, and bacon over the chicken, smothering it.


Let it cook for another 3-5 minutes on low heat to meld the flavors.




4. Serve:


Serve the smothered chicken hot with a side of rice, mashed potatoes, or a fresh salad. Enjoy the creamy, flavorful goodness!
