Flourless Oatmeal Bread

 











Ingredients


2 ½ cups rolled oats (gluten-free if needed)


1 ½ teaspoons baking powder


½ teaspoon baking soda


1 teaspoon cinnamon


¼ teaspoon salt


2 large eggs


1 cup milk (dairy or plant-based)


¼ cup honey or maple syrup


1 teaspoon vanilla extract


½ cup unsweetened applesauce (or mashed bananas for sweetness)


Optional: ¼ cup nuts, seeds, or dried fruits (raisins, cranberries, etc.)



Instructions


1. Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper or lightly grease it.



2. In a food processor or blender, pulse the rolled oats until they turn into a fine oat flour. You should have about 2 cups of oat flour.



3. In a large bowl, combine the oat flour, baking powder, baking soda, cinnamon, and salt. Mix well.



4. In another bowl, whisk together the eggs, milk, honey or maple syrup, vanilla extract, and applesauce (or mashed banana).



5. Pour the wet ingredients into the dry ingredients and stir until just combined. If you’re adding nuts, seeds, or dried fruit, fold them in now.



6. Pour the batter into the prepared loaf pan and smooth the top.



7. Bake for 40–45 minutes, or until the bread is golden brown and a toothpick inserted comes out clean.



8. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.




Serving Suggestions


Slice and serve with a spread of almond butter, peanut butter, or a drizzle of honey.


Pair with fresh fruit or a dollop of Greek yogurt for extra protein.
