Oatmeal - Tiramisu! Sugar free! Everyone loves it - even kids

 











Ingredients:


1 cup rolled oats


2 cups unsweetened almond milk (or any milk of choice)


1 tsp vanilla extract


1 tbsp cocoa powder


1 tsp instant coffee granules (optional for a coffee flavor)


2 tbsp unsweetened Greek yogurt


2 tbsp sugar substitute (like stevia, monk fruit, or erythritol)


2 tbsp mascarpone cheese (or cream cheese as an alternative)


1 tbsp unsweetened cocoa powder (for dusting)


Cinnamon (optional, for dusting)

Instructions:


1. Cook the oatmeal – In a saucepan, combine oats and almond milk. Bring to a simmer and cook over medium heat for 5-7 minutes or until the oats are tender and the mixture thickens. Stir in the vanilla extract and instant coffee (if using).



2. Make the creamy filling – While the oatmeal is cooking, whisk together Greek yogurt, mascarpone cheese, and sugar substitute until smooth and creamy.



3. Layer the oatmeal – Once the oatmeal is cooked, divide it into individual serving cups or bowls. Add a layer of the creamy mascarpone mixture on top.



4. Top with cocoa – Lightly dust with unsweetened cocoa powder and cinnamon for a tiramisu-like finish.



5. Chill and serve – Let the oatmeal set in the fridge for at least 30 minutes (or overnight for a firmer texture).




Optional Variations:


You can add chopped nuts or a drizzle of sugar-free chocolate syrup for added flavor.


If you want a stronger coffee flavor, soak the oats in a bit of brewed coffee before cooking.
