Ingredients:

  • 4 bone-in pork chops
  • 4 medium potatoes, peeled and sliced into 1/4-inch thick rounds
  • 1 tablespoon olive oil

  • 1 teaspoon dried thyme (or rosemary, if preferred)
  • Salt and pepper, to taste
  • 1/2 cup chicken broth (or water)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Heat olive oil in a large skillet over medium heat. Season the pork chops with salt, pepper, garlic powder, onion powder, and thyme (or rosemary).
  3. Sear the pork chops in the skillet for 2-3 minutes on each side, until lightly browned. Remove them from the skillet and set aside.
  4. In the same skillet, add the sliced potatoes, season with a little salt, and cook for 5-7 minutes, just until they start to soften.
  5. In a baking dish, arrange the potatoes in an even layer. Pour chicken broth over the potatoes, and place the pork chops on top of the potatoes.
  6. Dot the top of the pork chops with butter (optional) and cover the dish with foil.

2. Form & Bake Meatloaf: Transfer the mixture to a loaf pan, pressing it into an even shape. Bake for 60 minutes, or until the meatloaf reaches an internal temperature of 160°F (70°C).



3. Make Caramelized Onion Gravy: While the meatloaf is baking, heat butter in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until they’re soft and golden brown, about 15-20 minutes. Add garlic and cook for another 1-2 minutes.



4. Prepare Gravy: Sprinkle flour over the onions and stir to combine. Slowly add beef broth, Worcestershire sauce, salt, and pepper. Stir until the gravy thickens, about 5 minutes.



5. Serve: Once the meatloaf is done, remove it from the oven and let it rest for 5-10 minutes before slicing. Serve the slices topped with the caramelized onion gravy.

4 pita bread or flatbreads

Instructions:
