Marry Me Chicken Pasta

Ingredients:

  • 1 ½ pounds boneless, skinless chicken breasts, cut into 1-inch pieces
  • 10 ounces penne pasta
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes (optional)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup sun-dried tomatoes, chopped
  • 1 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions:

  1. Bring a large pot of salted water to a boil and cook the penne pasta until al dente. Drain and set aside.
  2. Season the chicken pieces with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 6–7 minutes. Remove from skillet and set aside.
  3. In the same skillet, add garlic, Italian seasoning, and red pepper flakes. Cook for 1 minute until fragrant.
  4. Pour in chicken broth, heavy cream, and sun-dried tomatoes. Stir and bring to a simmer.
  5. Stir in Parmesan cheese until melted and the sauce slightly thickens.
  6. Return chicken to the skillet, add cooked pasta, and toss until everything is evenly coated in the creamy sauce.
  7. Garnish with fresh parsley and extra Parmesan before serving.
