CHEESY BEEF-STUFFED TORTILLA BAKE
Ingredients:
- 500 g (1 lb) ground beef
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp paprika
- ½ tsp cumin (optional)
- 1 cup tomato sauce (or crushed tomatoes)
- 6–8 large flour tortillas
- 2 cups shredded cheese (mozzarella + cheddar mix)
- ½ cup fresh parsley or cilantro, chopped
- ½ cup sour cream (optional)
- Butter or oil for brushing
Instructions:

Preheat the oven to 180°C (350°F).

Prepare the meat filling:
- Heat olive oil in a pan over medium heat.
- Add chopped onion and cook until soft (2–3 min).
- Add garlic and sauté for 30 sec.
- Add ground beef, break it apart, and cook until browned (6–8 min).
- Season with salt, pepper, paprika, and cumin.
- Stir in tomato sauce and simmer for 5–7 min until thick. Remove from heat.

Assemble the rolls:
- Lay a tortilla flat, place some meat filling in the center, sprinkle with cheese and chopped parsley.
- Fold the sides in and roll up like an envelope.
- Repeat for all tortillas.

Arrange in a baking dish:
- Grease a baking dish lightly.
- Place the rolled tortillas seam-side down.
- Brush the tops with melted butter or a little oil.
- Sprinkle more cheese on top.

Bake:
- Bake for 20–25 minutes until golden and cheese is melted.

- Garnish with parsley or cilantro.
- Serve hot with sour cream or your favorite sauce.
