CHEESY BEEF-STUFFED TORTILLA BAKE

Ingredients:

  • 500 g (1 lb) ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • ½ tsp cumin (optional)
  • 1 cup tomato sauce (or crushed tomatoes)
  • 6–8 large flour tortillas
  • 2 cups shredded cheese (mozzarella + cheddar mix)
  • ½ cup fresh parsley or cilantro, chopped
  • ½ cup sour cream (optional)
  • Butter or oil for brushing

Instructions:

  1. Preheat the oven to 180°C (350°F).

  2. Prepare the meat filling:

    • Heat olive oil in a pan over medium heat.
    • Add chopped onion and cook until soft (2–3 min).
    • Add garlic and sauté for 30 sec.
    • Add ground beef, break it apart, and cook until browned (6–8 min).
    • Season with salt, pepper, paprika, and cumin.
    • Stir in tomato sauce and simmer for 5–7 min until thick. Remove from heat.
  3. Assemble the rolls:

    • Lay a tortilla flat, place some meat filling in the center, sprinkle with cheese and chopped parsley.
    • Fold the sides in and roll up like an envelope.
    • Repeat for all tortillas.
  4. Arrange in a baking dish:

    • Grease a baking dish lightly.
    • Place the rolled tortillas seam-side down.
    • Brush the tops with melted butter or a little oil.
    • Sprinkle more cheese on top.
  5. Bake:

    • Bake for 20–25 minutes until golden and cheese is melted.
  6. Serve:

    • Garnish with parsley or cilantro.
    • Serve hot with sour cream or your favorite sauce.
