PICKLED BEETS

Ingredients:

  • 6 medium beets
  • 1 cup vinegar
  • 1 cup water
  • ½ cup sugar
  • 1 tsp salt
  • ½ tsp ground cloves (optional)
  • ½ tsp allspice (optional)

Instructions:

  1. Wash and boil beets for 30-40 minutes until tender.
  2. Peel and slice beets after cooling slightly.
  3. Combine vinegar, water, sugar, salt, and spices in a pot. Bring to a boil.
  4. Add beets to the liquid and simmer for 2-3 minutes.
  5. Pack into jars and pour hot liquid over beets.
  6. Seal and refrigerate for at least 24 hours before eating.
