PICKLED BEETS
Ingredients:
- 6 medium beets
- 1 cup vinegar
- 1 cup water
- ½ cup sugar
- 1 tsp salt
- ½ tsp ground cloves (optional)
- ½ tsp allspice (optional)
Instructions:
- Wash and boil beets for 30-40 minutes until tender.
- Peel and slice beets after cooling slightly.
- Combine vinegar, water, sugar, salt, and spices in a pot. Bring to a boil.
- Add beets to the liquid and simmer for 2-3 minutes.
- Pack into jars and pour hot liquid over beets.
- Seal and refrigerate for at least 24 hours before eating.
