INGREDIENTS

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk (or buttermilk)
  • 2 large eggs
  • 1/4 cup melted butter (or oil)

INSTRUCTIONS

  1. Preheat oven to 400°F (200°C).
  2. Grease a 9x9-inch pan.
  3. In a large bowl, mix cornmeal, flour, sugar, baking powder, and salt.
  4. In another bowl, whisk milk, eggs, and melted butter.
  5. Combine wet and dry ingredients. Stir until just mixed (don’t overmix).
  6. Pour batter into pan.
  7. Bake for 20–25 minutes or until golden brown and a toothpick comes out clean.
  8. Cool slightly before serving.
