🥕 CARROT CAKE WITH CREAM CHEESE FROSTING
INGREDIENTS:
For the Cake:
- 2 cups all-purpose flour
- 2 cups grated carrots
- 1 cup sugar
- 1 cup brown sugar
- 1 cup vegetable oil (or melted butter)
- 4 large eggs
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- ½ tsp nutmeg
- ½ tsp salt
- 1 cup chopped walnuts or pecans (optional)
For the Frosting:
- 200 g (8 oz) cream cheese (softened)
- ½ cup butter (softened)
- 2 cups powdered sugar
- 1 tsp vanilla extract
- Chopped nuts for topping
INSTRUCTIONS:

Preheat oven to 180°C (350°F). Grease and line a square or rectangular baking pan.

In a large bowl, whisk together:
- sugar, brown sugar, and oil.
- Add eggs one by one and beat until smooth.

Stir in the grated carrots.

In another bowl, mix:
- flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

Combine wet and dry ingredients. Mix gently.

Fold in the nuts (if using).

Pour the batter into the pan and bake for 40–50 minutes or until a toothpick comes out clean.

Let cake cool completely.

For frosting: Beat cream cheese, butter, vanilla, and powdered sugar until creamy.

Spread frosting over cooled cake. Sprinkle chopped nuts on top.
