WW Lentil Soup

 








Here's a Weight Watchers (WW)-friendly Lentil Soup recipe that's hearty, nutritious, and low in points:


WW Lentil Soup (Zero to Low Points)

Ingredients:

  • 1 cup dry brown or green lentils, rinsed
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes (no salt added)
  • 6 cups vegetable broth (low sodium)
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Juice of 1/2 lemon (optional, for brightness)
  • Olive oil spray or 1 tsp olive oil (optional)

Instructions:

  1. Lightly spray a large pot with olive oil spray or use 1 tsp olive oil over medium heat.
  2. Add onion, carrots, and celery. Sauté 5–7 minutes, until softened.
  3. Add garlic, cumin, paprika, and thyme. Cook 1 minute until fragrant.
  4. Stir in lentils, diced tomatoes, broth, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for 30–35 minutes, until lentils are tender.
  6. Remove bay leaf. Add lemon juice if using, and season with salt and pepper to taste.
  7. Optional: Use an immersion blender to puree part of the soup for a thicker texture.

Serving Tip:

  • Garnish with chopped parsley or a dollop of nonfat Greek yogurt.
