WW Lentil Soup (Zero to Low Points)
Ingredients:
- 1 cup dry brown or green lentils, rinsed
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes (no salt added)
- 6 cups vegetable broth (low sodium)
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/2 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Juice of 1/2 lemon (optional, for brightness)
- Olive oil spray or 1 tsp olive oil (optional)
Instructions:
- Lightly spray a large pot with olive oil spray or use 1 tsp olive oil over medium heat.
- Add onion, carrots, and celery. Sauté 5–7 minutes, until softened.
- Add garlic, cumin, paprika, and thyme. Cook 1 minute until fragrant.
- Stir in lentils, diced tomatoes, broth, and bay leaf.
