Crispy Chicken Bites

Ingredients:

  • 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • Oil for frying

Instructions:

  1. Marinate the chicken pieces in buttermilk for at least 30 minutes (or up to overnight in the fridge).
  2. In a bowl, mix flour, cornstarch, garlic powder, onion powder, paprika, salt, and pepper.
  3. Remove chicken from buttermilk and dredge in flour mixture until well coated.
  4. Heat oil in a deep skillet or fryer to 350°F (175°C).
  5. Fry chicken pieces in batches until golden brown and cooked through (about 3-5 minutes per batch). Drain on paper towels.

Honey Pepper Sauce

Ingredients:

  • 1/2 cup honey
  • 2 tbsp soy sauce
  • 1 tbsp apple cider vinegar
  • 1/2 tsp crushed red pepper flakes (adjust to taste)
  • 1/2 tsp black pepper
  • 1 tbsp cornstarch + 2 tbsp water (for slurry)

Instructions:

  1. In a saucepan, combine honey, soy sauce, vinegar, red pepper flakes, and black pepper. Bring to a simmer over medium heat.
  2. Stir in the cornstarch slurry and simmer until thickened (about 2 minutes).
  3. Toss the fried chicken bites in the sauce or drizzle over top when serving.

Serving Suggestions:

  • Garnish with green onions or sesame seeds.
  • Pair with steamed rice, roasted veggies, or fries.
