Easy Carrot Cake
Ingredients:
- 2 cups grated carrots (about 3–4 medium carrots)
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg (optional)
- 2/3 cup vegetable oil
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup crushed pineapple (drained) or applesauce (optional, adds moisture)
- 1/2 cup chopped walnuts or pecans (optional)
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour an 8x8-inch pan (or line with parchment).
- In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a large bowl, beat together oil, sugar, eggs, and vanilla until smooth.
