Here's a simple and delicious Easy Carrot Cake recipe — moist, lightly spiced, and perfect for any occasion:


Easy Carrot Cake

Ingredients:

  • 2 cups grated carrots (about 3–4 medium carrots)
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg (optional)
  • 2/3 cup vegetable oil
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup crushed pineapple (drained) or applesauce (optional, adds moisture)
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour an 8x8-inch pan (or line with parchment).
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, beat together oil, sugar, eggs, and vanilla until smooth.
  4. Stir in grated carrots and pineapple/applesauce if using.
  5. Gradually add dry ingredients to wet mixture. Fold in nuts if using.
  6. Pour batter into prepared pan and bake for 30–35 minutes, or until a toothpick comes out clean.
  7. Let cool completely before frosting.

Easy Cream Cheese Frosting (Optional but recommended!)

  • 4 oz cream cheese, softened
  • 2 tbsp butter, softened
  • 1 cup powdered sugar
  • 1/2 tsp vanilla extract

Beat all ingredients until smooth and creamy. Spread over cooled cake.
