White Chocolate Strawberry Cheesecake..

 







Here’s a rich and dreamy White Chocolate Strawberry Cheesecake recipe that’s perfect for special occasions (or just because!):


Ingredients

Crust:

  • 1½ cups graham cracker crumbs (or digestive biscuits)
  • 2 tbsp sugar
  • 6 tbsp melted butter

Cheesecake Filling:

  • 8 oz white chocolate, chopped
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream

Strawberry Topping:

  • 1½ cups fresh strawberries, sliced
  • 2 tbsp sugar
  • 1 tsp lemon juice
  • 1 tbsp cornstarch + 1 tbsp water (for thickening)

Instructions

Make the crust:

  1. Preheat oven to 325°F (160°C).
  2. Mix graham cracker crumbs, sugar, and melted butter. Press into a 9-inch springform pan.
  3. Bake for 10 minutes, then let cool.

Prepare the filling:

  1. Melt white chocolate in a double boiler or microwave (in 30-sec bursts), stirring until smooth. Cool slightly.
  2. Beat cream cheese until smooth. Add sugar, then eggs one at a time. Mix in vanilla and sour cream.
  3. Stir in melted white chocolate.
  4. Pour over crust and smooth the top.

Bake the cheesecake:

  1. Bake at 325°F (160°C) for 55–65 minutes, until the center is just set.
  2. Turn off oven, crack the door, and let cheesecake sit inside for 1 hour. Chill at least 4 hours or overnight.

Make the topping:

  1. Combine strawberries, sugar, and lemon juice in a saucepan. Cook over medium heat until juicy (5 minutes).
  2. Stir in cornstarch-water mix and cook until thickened.
  3. Cool completely before spreading on the cheesecake.
