White Chocolate Strawberry Cheesecake
Ingredients:
For the crust:
- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- ½ cup melted butter
For the cheesecake filling:
- 225g (8 oz) white chocolate, chopped
- 680g (24 oz) cream cheese, softened
- ¾ cup granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
- ½ cup sour cream
- 1 ½ cups fresh strawberries, chopped
For the topping (optional but delicious):
- 1 cup strawberries, sliced
- 2 tbsp strawberry jam (warmed to drizzle)
Instructions:

Preheat oven to 160°C (325°F). Grease a 9-inch springform pan.

Make the crust:
- Mix graham cracker crumbs, sugar, and melted butter.
- Press the mixture into the bottom of the pan. Bake for 10 minutes. Let cool.

Melt the white chocolate gently in a microwave or double boiler. Let cool slightly.

Make the filling:
- Beat cream cheese until smooth. Add sugar and vanilla, mix well.
- Add eggs one at a time, beating on low.
- Mix in sour cream and melted white chocolate.
- Fold in chopped strawberries.

- Pour the filling over the crust.
- Bake for 55–65 minutes or until the center is almost set.
- Turn off oven, leave cheesecake inside for 1 hour. Then chill for at least 4 hours or overnight.
