PINEAPPLE FRITTERS (UPSIDE-DOWN DONUTS)

INGREDIENTS:

FOR THE DONUTS:

  • 1 CAN PINEAPPLE RINGS (DRAINED, SAVE JUICE)
  • 1 CAN BISCUIT DOUGH (LIKE PILLSBURY GRANDS)
  • OIL FOR FRYING (VEGETABLE OR CANOLA)

FOR THE GLAZE:

  • 1 CUP POWDERED SUGAR
  • 2–3 TABLESPOONS PINEAPPLE JUICE
  • 1/2 TEASPOON VANILLA EXTRACT (OPTIONAL)

INSTRUCTIONS:

1. PREP THE PINEAPPLE:

  • PAT DRY THE PINEAPPLE RINGS.
  • SAVE THE JUICE FOR THE GLAZE.

2. PREP THE DOUGH:

  • CUT A HOLE IN THE CENTER OF EACH BISCUIT TO FORM A RING.
  • PRESS A PINEAPPLE RING ON TOP OF EACH BISCUIT RING.

3. HEAT OIL:

  • HEAT OIL TO 350°F (175°C) IN A SKILLET OR FRYER.

4. FRY THE FRITTERS:

  • PLACE IN OIL, PINEAPPLE SIDE DOWN.
  • FRY 2–3 MINUTES PER SIDE UNTIL GOLDEN.
  • REMOVE AND DRAIN ON PAPER TOWELS.

5. MAKE THE GLAZE:

  • MIX POWDERED SUGAR WITH PINEAPPLE JUICE.
  • ADD VANILLA IF USING. STIR UNTIL SMOOTH.

6. GLAZE THE FRITTERS:

  • DRIZZLE GLAZE OVER WARM FRITTERS.
  • LET SET SLIGHTLY. ENJOY!
