PINEAPPLE FRITTERS (UPSIDE-DOWN DONUTS)
INGREDIENTS:
FOR THE DONUTS:
- 1 CAN PINEAPPLE RINGS (DRAINED, SAVE JUICE)
- 1 CAN BISCUIT DOUGH (LIKE PILLSBURY GRANDS)
- OIL FOR FRYING (VEGETABLE OR CANOLA)
FOR THE GLAZE:
- 1 CUP POWDERED SUGAR
- 2–3 TABLESPOONS PINEAPPLE JUICE
- 1/2 TEASPOON VANILLA EXTRACT (OPTIONAL)
INSTRUCTIONS:
1. PREP THE PINEAPPLE:
- PAT DRY THE PINEAPPLE RINGS.
- SAVE THE JUICE FOR THE GLAZE.
2. PREP THE DOUGH:
- CUT A HOLE IN THE CENTER OF EACH BISCUIT TO FORM A RING.
- PRESS A PINEAPPLE RING ON TOP OF EACH BISCUIT RING.
3. HEAT OIL:
- HEAT OIL TO 350°F (175°C) IN A SKILLET OR FRYER.
4. FRY THE FRITTERS:
- PLACE IN OIL, PINEAPPLE SIDE DOWN.
- FRY 2–3 MINUTES PER SIDE UNTIL GOLDEN.
- REMOVE AND DRAIN ON PAPER TOWELS.
5. MAKE THE GLAZE:
- MIX POWDERED SUGAR WITH PINEAPPLE JUICE.
- ADD VANILLA IF USING. STIR UNTIL SMOOTH.
6. GLAZE THE FRITTERS:
- DRIZZLE GLAZE OVER WARM FRITTERS.
- LET SET SLIGHTLY. ENJOY!
