NO-BAKE CREAMY CHEESECAKE
INGREDIENTS:
- 200 g graham crackers or digestive biscuits
- 100 g melted butter
- 400 g cream cheese (room temp)
- 1 cup heavy cream (cold)
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- Juice of 1 lemon (optional)
INSTRUCTIONS:
1. MAKE THE CRUST:
- Crush graham crackers into fine crumbs.
- Mix with melted butter.
- Press into the base of a pan.
- Chill for 20–30 minutes.
2. MAKE THE FILLING:
- Beat cream cheese until smooth.
- Add powdered sugar, vanilla, and lemon juice.
- In a separate bowl, whip the heavy cream to stiff peaks.
- Fold whipped cream into cream cheese mixture.
3. ASSEMBLE:
- Spread the filling over the crust.
- Smooth the top.
4. CHILL:
- Refrigerate for 6 hours or overnight until firm.
5. SERVE:
- Slice and enjoy!
- Top with berries or fruit if desired.
