NO-BAKE CREAMY CHEESECAKE


INGREDIENTS:

  • 200 g graham crackers or digestive biscuits
  • 100 g melted butter
  • 400 g cream cheese (room temp)
  • 1 cup heavy cream (cold)
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • Juice of 1 lemon (optional)

INSTRUCTIONS:

1. MAKE THE CRUST:

  • Crush graham crackers into fine crumbs.
  • Mix with melted butter.
  • Press into the base of a pan.
  • Chill for 20–30 minutes.

2. MAKE THE FILLING:

  • Beat cream cheese until smooth.
  • Add powdered sugar, vanilla, and lemon juice.
  • In a separate bowl, whip the heavy cream to stiff peaks.
  • Fold whipped cream into cream cheese mixture.

3. ASSEMBLE:

  • Spread the filling over the crust.
  • Smooth the top.

4. CHILL:

  • Refrigerate for 6 hours or overnight until firm.

5. SERVE:

  • Slice and enjoy!
  • Top with berries or fruit if desired.
