LEMON CHEESECAKE BARS
INGREDIENTS
CRUST:
- 2 cups graham cracker crumbs (or almond flour)
- 1/2 cup melted butter
- 2 tablespoons sugar (or sugar substitute)
FILLING:
- 16 oz cream cheese (softened)
- 3/4 cup sugar (or substitute)
- 2 large eggs
- 1/4 cup sour cream
- 1/4 cup lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
INSTRUCTIONS

Preheat oven to 325°F (160°C).
Line or grease a 9x13-inch baking pan. -
Make the crust:
Mix crumbs, butter, and sugar.
Press into bottom of pan.
Bake for 10 minutes. Cool slightly. -
Make the filling:
Beat cream cheese until smooth.
Add sugar, then eggs one at a time.
Add sour cream, lemon juice, zest, and vanilla.
Mix until smooth. -
Pour filling over crust and smooth the top.

Bake 30–35 minutes
or until center is just set. -
Cool completely.
Refrigerate at least 3 hours or overnight. -
Cut into bars and enjoy!
