CRISPY POTATO PATTIES
INGREDIENTS:
- 3 cups mashed potatoes
- 1 small onion, finely chopped
- 1/2 cup cooked mixed vegetables (optional)
- 2 green chilies, finely chopped (optional)
- 2 tablespoons fresh coriander, chopped
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- Salt to taste
- 2 tablespoons cornstarch or all-purpose flour
- Oil for frying
INSTRUCTIONS:

In a bowl, mix:
Mashed potatoes, onion, vegetables, chilies, coriander, spices, salt, and flour. -
Shape the mixture
into round or oval patties. -
Heat oil in a non-stick pan
over medium heat. -
Place patties in the pan
and fry until golden brown,
about 3–4 minutes per side. -
Remove and drain on paper towels.

Serve hot
with ketchup, chutney, or yogurt.
