Sure!CHOUX PASTRY (PÂTE À CHOUX)
INGREDIENTS:
- 1 cup WATER
- 1/2 cup UNSALTED BUTTER
- 1/4 tsp SALT
- 1 cup ALL-PURPOSE FLOUR
- 4 large EGGS
INSTRUCTIONS:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a saucepan, combine water, butter, and salt. Bring to a boil.
- Add the flour all at once. Stir until a ball forms and pulls away from the pan.
- Let cool 5–10 minutes.
- Add eggs one at a time, mixing well until smooth.
- Spoon or pipe onto baking sheet in 3-4 inch strips.
- Bake 25–30 minutes until golden. Cool completely.
VANILLA PASTRY CREAM FILLING
INGREDIENTS:
- 2 cups MILK
- 1/2 cup SUGAR
- 1/4 cup CORNSTARCH
- 4 EGG YOLKS
- 2 tsp VANILLA EXTRACT
- 2 tbsp BUTTER
INSTRUCTIONS:
- Whisk egg yolks, sugar, and cornstarch in a bowl.
- Heat milk in a saucepan until simmering.
- Slowly add milk to egg mixture, whisking constantly.
- Return to saucepan. Cook until thick, stirring constantly.
- Remove from heat. Stir in vanilla and butter.
- Cool and refrigerate until ready to use.
TO ASSEMBLE:
- Slice cooled puffs or poke a hole.
- Fill with chilled pastry cream using a spoon or piping bag.
- Dust with powdered sugar or drizzle with chocolate glaze (optional).
