INGREDIENTS:

  • 1 cup WATER
  • 1/2 cup UNSALTED BUTTER
  • 1/4 tsp SALT
  • 1 cup ALL-PURPOSE FLOUR
  • 4 large EGGS

INSTRUCTIONS:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a saucepan, combine water, butter, and salt. Bring to a boil.
  3. Add the flour all at once. Stir until a ball forms and pulls away from the pan.
  4. Let cool 5–10 minutes.
  5. Add eggs one at a time, mixing well until smooth.
  6. Spoon or pipe onto baking sheet in 3-4 inch strips.
  7. Bake 25–30 minutes until golden. Cool completely.

VANILLA PASTRY CREAM FILLING

INGREDIENTS:

  • 2 cups MILK
  • 1/2 cup SUGAR
  • 1/4 cup CORNSTARCH
  • 4 EGG YOLKS
  • 2 tsp VANILLA EXTRACT
  • 2 tbsp BUTTER

INSTRUCTIONS:

  1. Whisk egg yolks, sugar, and cornstarch in a bowl.
  2. Heat milk in a saucepan until simmering.
  3. Slowly add milk to egg mixture, whisking constantly.
  4. Return to saucepan. Cook until thick, stirring constantly.
  5. Remove from heat. Stir in vanilla and butter.
  6. Cool and refrigerate until ready to use.

TO ASSEMBLE:

  • Slice cooled puffs or poke a hole.
  • Fill with chilled pastry cream using a spoon or piping bag.
  • Dust with powdered sugar or drizzle with chocolate glaze (optional).
