Gluten-free & super fluffy!
Ingredients:
1 cup milk ๐ฅ
1/2 cup oil (like vegetable or olive) ๐ข️
1 tsp salt ๐ง
2 cups tapioca flour ๐ฟ
1 to 1 1/2 cups grated cheese (Parmesan or mozzarella) ๐ง
2 eggs ๐ฅ๐ฅ
Instructions:
1. Preheat oven to 375°F (190°C) ๐ฅ
2. In a saucepan, heat milk, oil, and salt until it just starts to boil ๐ซ
3. Remove from heat and stir in tapioca flour until smooth ๐ฅ
4. Let cool slightly, then mix in the eggs and cheese ๐ง๐ฅ
5. Pour or scoop batter into greased muffin cups ๐ง
6. Bake for 15–20 minutes until puffed and golden ⏱️
7. Let cool slightly and enjoy warm! ๐
