Banana Caramel Pudding Cups

 









Ingredients:


For the pudding layer:


2 cups milk ๐Ÿฅ›


2 tbsp cornstarch ๐ŸŒฝ


1/4 cup sugar (or sugar substitute) ๐Ÿฌ


1 tsp vanilla extract ๐Ÿฆ


Pinch of salt ๐Ÿง‚



For the caramel banana topping:


2 bananas, sliced ๐ŸŒ


1/4 cup brown sugar (or sugar substitute) ๐Ÿฏ


2 tbsp butter ๐Ÿงˆ


1 tbsp lemon juice ๐Ÿ‹


Optional: pinch of cinnamon ๐ŸŒฐ

Instructions:


1. Make the pudding:


In a saucepan, mix milk, sugar, cornstarch, salt, and vanilla. ๐Ÿฅ„


Cook over medium heat, stirring constantly until it thickens. ๐Ÿ”ฅ


Pour into small cups and let cool. Refrigerate for at least 1 hour. ❄️




2. Make the caramel banana topping:


In a pan, melt butter and add brown sugar. Stir until bubbly. ๐Ÿฏ๐Ÿ”ฅ


Add sliced bananas and lemon juice. Cook for 2–3 minutes. ๐ŸŒ


Sprinkle cinnamon if using. Remove from heat. ✨




3. Assemble:


Spoon the banana caramel topping over the chilled pudding. ๐Ÿฎ


Serve cold and enjoy! ๐Ÿ˜‹
