Ingredients:
☕ 1 cup strong brewed coffee (cooled)
๐ช 8-10 low-carb ladyfinger biscuits (or almond flour sponge cake)
๐ฅ 3 egg yolks
๐ฏ 2 tbsp sugar-free sweetener (erythritol or monk fruit)
๐ฅ 1 tsp vanilla extract
๐ฅ 1 cup mascarpone cheese
๐ฅ 1/2 cup heavy whipping cream
๐ซ Unsweetened cocoa powder for dusting
Instructions:
1️⃣ Brew strong coffee and let it cool. Optionally, add a splash of rum or vanilla extract. ☕
2️⃣ In a bowl, whisk egg yolks and sweetener over a double boiler until thick and pale. Remove from heat. ๐ฅ
3️⃣ Stir in mascarpone cheese until smooth.
4️⃣ In another bowl, whip heavy cream until stiff peaks form, then fold into the mascarpone mixture. ๐ฅ
5️⃣ Dip ladyfingers briefly in coffee and place them at the bottom of serving glasses.
6️⃣ Layer with mascarpone cream, then repeat layers.
