Tiramisu Cups

 










Servings: 4


Ingredients:


☕ 1 cup strong brewed coffee (cooled)


๐Ÿช 8-10 low-carb ladyfinger biscuits (or almond flour sponge cake)


๐Ÿฅš 3 egg yolks


๐Ÿฏ 2 tbsp sugar-free sweetener (erythritol or monk fruit)


๐Ÿฅ„ 1 tsp vanilla extract


๐Ÿฅ› 1 cup mascarpone cheese


๐Ÿฅ› 1/2 cup heavy whipping cream


๐Ÿซ Unsweetened cocoa powder for dusting



Instructions:


1️⃣ Brew strong coffee and let it cool. Optionally, add a splash of rum or vanilla extract. ☕

2️⃣ In a bowl, whisk egg yolks and sweetener over a double boiler until thick and pale. Remove from heat. ๐Ÿฅ„

3️⃣ Stir in mascarpone cheese until smooth.

4️⃣ In another bowl, whip heavy cream until stiff peaks form, then fold into the mascarpone mixture. ๐Ÿฅ›

5️⃣ Dip ladyfingers briefly in coffee and place them at the bottom of serving glasses.

6️⃣ Layer with mascarpone cream, then repeat layers.

7️⃣ Finish with a dusting of cocoa powder. ๐Ÿซ

8️⃣ Chill for at least 4 hours (or overnight) for the best flavor. ❄️
