Pineapple Pecan Cake

 








Ingredients


For the Cake:


2 cups all-purpose flour ๐ŸŒพ


1 ½ cups sugar (or sugar-free alternative) ๐Ÿš๐Ÿšซ


1 tsp baking soda ๐Ÿฅ„


½ tsp salt ๐Ÿง‚


2 eggs ๐Ÿฅš๐Ÿฅš


1 (20 oz) can crushed pineapple with juice ๐Ÿ๐Ÿฅซ


1 cup chopped pecans ๐ŸŒฐ



For the Frosting:


8 oz cream cheese, softened ๐Ÿง€


½ cup unsalted butter, softened ๐Ÿงˆ


2 cups powdered sugar (or sugar-free alternative) ❄️๐Ÿšซ


1 tsp vanilla extract ๐ŸŒฟ


½ cup chopped pecans for topping ๐ŸŒฐ



Instructions


1️⃣ Preheat oven to 350°F (175°C). Grease a 9x13-inch pan ๐Ÿบ.

2️⃣ In a bowl, mix flour, sugar, baking soda, and salt. Add eggs, crushed pineapple with juice, and pecans. Stir until combined ๐Ÿฅ„.

3️⃣ Pour batter into the pan and bake for 30-35 minutes or until a toothpick comes out clean ⏳.

4️⃣ While cake cools, beat cream cheese, butter, powdered sugar, and vanilla until smooth ๐ŸŽ‚.
