Chocolate Loaf Cake

 












Ingredients ๐Ÿ“


1 ½ cups all-purpose flour ๐ŸŒพ


½ cup cocoa powder ๐Ÿซ


1 tsp baking soda ๐Ÿฅ„


½ tsp salt ๐Ÿง‚


½ cup unsalted butter, melted ๐Ÿงˆ


¾ cup sugar (or sugar substitute) ๐Ÿฏ


2 large eggs ๐Ÿฅš


1 tsp vanilla extract ๐ŸŒฟ


1 cup buttermilk ๐Ÿฅ›


½ cup hot coffee (makes it extra moist!) ☕



Instructions ๐Ÿ‘จ‍๐Ÿณ


1️⃣ Preheat oven to 350°F (175°C). Grease a loaf pan.

2️⃣ In a bowl, whisk flour, cocoa, baking soda, and salt.

3️⃣ In another bowl, mix butter, sugar, eggs, and vanilla.

4️⃣ Alternate adding dry ingredients and buttermilk to the wet mix.

5️⃣ Stir in hot coffee (it enhances chocolate flavor!).

6️⃣ Pour into pan and bake for 45-50 min (a toothpick should come out slightly moist).

7️⃣ Cool before frosting!


For the frosting:


½ cup caramel sauce or peanut butter ๐Ÿฅœ


1 cup powdered sugar


2 tbsp milk



Mix and spread over the cake.

(Low-carb and still super moist!)

1 ½ cups almond flour ๐ŸŒฐ


½ cup cocoa powder ๐Ÿซ


1 tsp baking powder ๐Ÿฅ„


¼ tsp salt ๐Ÿง‚


⅓ cup butter or coconut oil ๐Ÿงˆ


½ cup erythritol or monk fruit sweetener ๐Ÿฏ


3 eggs ๐Ÿฅš


1 tsp vanilla extract ๐ŸŒฟ


½ cup unsweetened almond milk ๐Ÿฅ›


¼ cup brewed coffee (optional but makes it moist!) ☕



Instructions ๐Ÿ‘จ‍๐Ÿณ


1️⃣ Preheat oven to 350°F (175°C). Grease a loaf pan.

2️⃣ Mix almond flour, cocoa, baking powder, and salt.

3️⃣ In another bowl, beat butter, sweetener, eggs, and vanilla.

4️⃣ Add dry ingredients and almond milk. Stir in coffee.

5️⃣ Bake for 40-45 min, until a toothpick comes out mostly clean.

6️⃣ Cool before frosting.


For keto frosting:


½ cup peanut butter ๐Ÿฅœ


2 tbsp heavy cream ๐Ÿฅ›


1 tbsp powdered erythritol



Mix and spread over the cake.
