Potatoes with Spinach and Eggs (Easy Dinner)


Ingredients:


4 medium potatoes, peeled and cubed


1 onion, chopped


4 eggs


100g soft cream cheese


150g mozzarella cheese, grated


2 cups fresh spinach, chopped


2 tbsp vegetable oil


Salt & black pepper (to taste)


Paprika or chili flakes (optional, for spice)

Instructions:


1. Cook the potatoes: In a pan, heat 1 tbsp oil and sauté the potatoes until golden and tender (about 10-12 minutes). Remove and set aside.



2. Sauté the onions & spinach: In the same pan, add 1 tbsp oil, sauté the onions until soft, then add spinach and cook until wilted.



3. Mix with cheese: Stir in the soft cream cheese and return the potatoes to the pan. Mix well.



4. Add eggs: Make small wells in the mixture and crack the eggs into them.



5. Top with mozzarella and cover the pan. Let it cook on low heat until the eggs are set (about 5-7 minutes).



6. Season & serve: Sprinkle with salt, pepper, and paprika. Enjoy hot!
