2 large sweet onions (Vidalia or yellow onions work best)
2 tbsp olive oil or melted butter
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp smoked paprika (optional)
1 cup shredded cheese (cheddar, mozzarella, or a blend)
1/4 cup grated Parmesan cheese
1/4 cup heavy cream (optional, for extra creaminess)
1/2 tsp dried thyme or Italian seasoning
1/4 cup breadcrumbs (optional, for a crispy top)
Fresh parsley or chives, chopped (for garnish)
Instructions
1. Preheat Oven
Preheat your oven to 375°F (190°C). Grease a baking dish or line a baking sheet with parchment paper.
2. Prepare the Onions
Peel the onions and slice them into thick rings (about ½ inch thick). Keep the rings stacked together in their natural shape.
3. Season the Onion Stacks
Place the onion stacks on the prepared baking dish. Drizzle with olive oil or melted butter.
Season with salt, pepper, garlic powder, and smoked paprika.
4. Add Cheese & Cream
Sprinkle shredded cheese and Parmesan over each stack.
If using heavy cream, drizzle a little over each stack for extra richness.
Sprinkle dried thyme or Italian seasoning on top.
5. Top with Breadcrumbs (Optional)
If you want a crispy topping, sprinkle breadcrumbs over the cheese.
6. Bake
Bake uncovered for 20-25 minutes, or until the cheese is melted and bubbly, and the onions are tender.
If needed, broil for 1-2 minutes at the end for a golden, crispy top.
7. Garnish & Serve
Sprinkle with fresh parsley or chives. Serve warm as a side dish or appetizer.
