Ingredients

  • 3 ½ cups (440 g) all-purpose flour or bread flour
  • 1 ½ teaspoons salt
  • 1 teaspoon sugar
  • 2 ¼ teaspoons instant yeast (1 packet)
  • 1 ¼ cups (300 ml) warm water
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced (optional)
  • 1 tablespoon dried herbs (thyme, oregano, or rosemary)
  • Extra flour for dusting
  • Optional topping: coarse salt, herbs, or olive oil

Instructions

Step 1: Activate the Yeast

In a large bowl, combine warm water, sugar, and yeast. Let it sit for 5–10 minutes until foamy. This shows the yeast is active.

Step 2: Mix the Dough

Add flour, salt, olive oil, garlic, and herbs to the yeast mixture. Mix until a soft dough forms.

Step 3: Knead the Dough

Transfer the dough to a floured surface and knead for about 8–10 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook for 5–6 minutes.

Step 4: First Rise

Place the dough in a lightly oiled bowl, cover with a towel, and let it rise in a warm place for 1–1.5 hours, or until doubled in size.

Step 5: Shape the Dough

Punch down the dough gently to release air. Shape it into a loaf or oval and place it on a baking tray lined with parchment paper.

Step 6: Second Rise

Cover and let it rise again for 30–45 minutes.

Step 7: Score and Bake

Preheat oven to 220°C (425°F).
Use a sharp knife to score the top of the loaf. Brush lightly with olive oil and sprinkle herbs if desired.

Bake for 25–30 minutes until golden brown and crisp.

Step 8: Cool and Serve

Let the bread cool on a rack for at least 15 minutes before slicing. This helps the texture set properly.
