Loaded Baked Potatoes with Pulled Meat & Cheese:

 











Ingredients

  • 4 large russet potatoes
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 cups pulled pork (or shredded beef/chicken)
  • 1 cup BBQ sauce (optional, if using pulled pork)
  • 2 cups shredded mozzarella (or cheddar, or a mix)
  • 2 tbsp butter
  • ½ cup sour cream (for serving)
  • 2 tbsp chopped green onions (for garnish)

Instructions

  1. Prepare the Potatoes

    • Preheat oven to 400°F (200°C).
    • Scrub potatoes clean and pat dry.
    • Rub each potato with olive oil, salt, and pepper.
    • Place on a baking sheet and bake for 50–60 minutes until skins are crispy and insides are soft.
  2. Prepare the Filling

    • While potatoes are baking, warm up your pulled pork (or meat of choice).
    • Mix with BBQ sauce if desired.
  3. Stuff the Potatoes

    • Once baked, cut a slit on top of each potato and carefully scoop out a little of the inside to make room for filling.
    • Add a small pat of butter inside each potato.
    • Stuff generously with pulled meat.
  4. Add Cheese & Bake Again

    • Sprinkle each potato with plenty of shredded mozzarella (or your choice of cheese).
    • Return to oven for 5–8 minutes until cheese is melted and golden.
  5. Serve

    • Top with sour cream and green onions.
    • Serve hot and enjoy!
