Ingredients
- 4 large russet potatoes
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 2 cups pulled pork (or shredded beef/chicken)
- 1 cup BBQ sauce (optional, if using pulled pork)
- 2 cups shredded mozzarella (or cheddar, or a mix)
- 2 tbsp butter
- ½ cup sour cream (for serving)
- 2 tbsp chopped green onions (for garnish)
Instructions

Prepare the Potatoes
- Preheat oven to 400°F (200°C).
- Scrub potatoes clean and pat dry.
- Rub each potato with olive oil, salt, and pepper.
- Place on a baking sheet and bake for 50–60 minutes until skins are crispy and insides are soft.

Prepare the Filling
- While potatoes are baking, warm up your pulled pork (or meat of choice).
- Mix with BBQ sauce if desired.

Stuff the Potatoes
- Once baked, cut a slit on top of each potato and carefully scoop out a little of the inside to make room for filling.
- Add a small pat of butter inside each potato.
- Stuff generously with pulled meat.

Add Cheese & Bake Again
- Sprinkle each potato with plenty of shredded mozzarella (or your choice of cheese).
- Return to oven for 5–8 minutes until cheese is melted and golden.

Serve
- Top with sour cream and green onions.
- Serve hot and enjoy!
