  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp paprika or chili powder (optional)
  • 1 large egg
  • 1/3 cup milk
  • 2 cups corn kernels (fresh, canned, or frozen & thawed)
  • 1/4 cup chopped green onions or chives
  • 1/4 cup shredded cheese (optional – cheddar or pepper jack work well)
  • 1–2 tbsp chopped parsley or cilantro (optional)
  • 2–3 tbsp oil (for frying, e.g. canola or vegetable oil)

🍳 Instructions

  1. Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, salt, pepper, and paprika/chili powder if using.

  2. Add Wet Ingredients: Add egg and milk to the dry mix. Stir until combined—don’t overmix. The batter will be thick.

  3. Add Corn and Flavorings: Fold in corn, green onions, cheese (if using), and herbs.

  4. Fry the Fritters:

    • Heat oil in a non-stick or cast-iron skillet over medium heat.
    • Scoop about 2 tablespoons of batter per fritter into the pan. Flatten slightly with a spatula.
    • Cook for 2–3 minutes per side, or until golden brown and crispy.
  5. Drain & Serve: Remove and drain on paper towels. Serve hot, optionally with sour cream, sriracha mayo, or a squeeze of lime.
