- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp paprika or chili powder (optional)
- 1 large egg
- 1/3 cup milk
- 2 cups corn kernels (fresh, canned, or frozen & thawed)
- 1/4 cup chopped green onions or chives
- 1/4 cup shredded cheese (optional – cheddar or pepper jack work well)
- 1–2 tbsp chopped parsley or cilantro (optional)
- 2–3 tbsp oil (for frying, e.g. canola or vegetable oil)

Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, salt, pepper, and paprika/chili powder if using.

Add Wet Ingredients: Add egg and milk to the dry mix. Stir until combined—don’t overmix. The batter will be thick.

Add Corn and Flavorings: Fold in corn, green onions, cheese (if using), and herbs.

Fry the Fritters:
- Heat oil in a non-stick or cast-iron skillet over medium heat.
