Ingredients:

  • 3/4 cup all-purpose flour
  • 2 tablespoons cornstarch
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon sugar
  • 1/4 teaspoon onion powder (optional)
  • 1/4 teaspoon paprika (optional)
  • 3/4 cup cold water (adjust as needed for consistency)
  • Oil, for frying

Instructions:

  1. Prepare the Batter:

    • In a mixing bowl, whisk together flour, cornstarch, baking soda, baking powder, salt, and sugar.
    • Add cold water gradually while whisking until you get a smooth, slightly thick batter. It should coat the back of a spoon but not be too runny.

  2. Prep Your Protein:

    • Pat dry fish fillets, chicken strips, or shrimp. Lightly dust with flour before dipping in batter (helps it stick better).
  3. Frying:

    • Heat oil in a deep fryer or heavy pot to 350°F (175°C).
    • Dip your prepared food in the batter, allow excess to drip off, and carefully place it in the hot oil.
    • Fry until golden brown and crispy, about 3–5 minutes depending on thickness.
  4. Drain and Serve:

    • Remove and place on a wire rack or paper towels to drain.
