Ingredients:

  • 1 lb ground beef (or ground turkey)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup sour cream
  • 1 can (15 oz) corn, drained (or frozen)
  • 1 1/2 cups shredded cheddar cheese (divided)
  • Salt & pepper to taste
  • 1 bag (about 32 oz) frozen tater tots
  • Optional: chopped green onions or parsley for garnish

Instructions:

  1. Preheat Oven: Preheat to 375°F (190°C). Grease a 9x13-inch baking dish.

  2. Cook Beef: In a large skillet over medium heat, brown ground beef with diced onion until meat is cooked through. Drain any grease. Add garlic and cook for another minute.

  3. Mix Filling: Stir in cream of mushroom soup, sour cream, corn, 1 cup of the shredded cheese, and season with salt and pepper.

  4. Assemble Casserole: Spread the beef mixture evenly in the prepared baking dish. Top with a layer of frozen tater tots. Sprinkle remaining 1/2 cup cheese on top.

  5. Bake: Bake uncovered for 35–40 minutes, or until tots are crispy and cheese is bubbly. If you want extra-crispy tots, broil for 2–3 minutes at the end.

  6. Garnish & Serve: Let rest for 5 minutes, then garnish with chopped green onions or parsley.
