Zucchini Patties – Better Than Meat!

Ingredients:

  • 2 medium zucchini, grated
  • 1/2 tsp salt
  • 1/4 cup chopped onion
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup shredded cheddar cheese
  • 1/3 cup breadcrumbs (use panko for extra crispiness)
  • 2 cloves garlic, minced
  • 2 eggs, beaten
  • 1/4 tsp black pepper
  • Optional: chopped fresh herbs (parsley, dill, basil)
  • Olive oil or butter for frying

Instructions:

  1. Prep the Zucchini:

    • Grate the zucchini and place it in a bowl with salt.
    • Let sit for 10–15 minutes, then squeeze out as much moisture as possible using a cheesecloth or clean towel.
  2. Make the Batter:

    • In a large bowl, mix the drained zucchini, onion, garlic, cheeses, breadcrumbs, eggs, pepper, and herbs.
    • Combine until the mixture holds together. If it’s too wet, add a little more breadcrumbs.
  3. Form Patties:

    • Shape into small patties, about 2–3 inches wide.
  4. Cook:

    • Heat olive oil in a skillet over medium heat.
    • Fry patties for about 3–4 minutes per side, or until golden brown and crispy.
  5. Serve:

    • Serve warm with sour cream, tzatziki, or a spicy mayo dipping sauce.

Tip: You can also bake them at 400°F (200°C) for 20–25 minutes, flipping halfway, for a lighter version.
