Zucchini Patties – Better Than Meat!
Ingredients:
- 2 medium zucchini, grated
- 1/2 tsp salt
- 1/4 cup chopped onion
- 1/4 cup grated Parmesan cheese
- 1/2 cup shredded cheddar cheese
- 1/3 cup breadcrumbs (use panko for extra crispiness)
- 2 cloves garlic, minced
- 2 eggs, beaten
- 1/4 tsp black pepper
- Optional: chopped fresh herbs (parsley, dill, basil)
- Olive oil or butter for frying
Instructions:

Prep the Zucchini:
- Grate the zucchini and place it in a bowl with salt.
- Let sit for 10–15 minutes, then squeeze out as much moisture as possible using a cheesecloth or clean towel.

Make the Batter:
- In a large bowl, mix the drained zucchini, onion, garlic, cheeses, breadcrumbs, eggs, pepper, and herbs.
- Combine until the mixture holds together. If it’s too wet, add a little more breadcrumbs.
