Here's a simple and delicious Potato Fritters recipe:

Ingredients:

  • 2 large potatoes, peeled and grated
  • 1 small onion, finely chopped or grated
  • 2–3 tablespoons all-purpose flour
  • 1 egg
  • Salt and pepper to taste
  • Optional: herbs (like parsley or chives), chili flakes, or cheese
  • Oil for frying

Instructions:

  1. Prep the potatoes:

    • Grate the potatoes and place them in a clean kitchen towel. Squeeze out as much liquid as possible.
  2. Mix the batter:

    • In a bowl, combine grated potatoes, onion, flour, egg, salt, pepper, and any optional add-ins.
  3. Heat the oil:

    • In a skillet, heat a generous amount of oil over medium heat.
  4. Fry:

    • Drop spoonfuls of the mixture into the hot oil and flatten slightly with a spatula.
    • Fry 3–4 minutes per side, or until golden brown and crispy.
  5. Drain and serve:

    • Transfer to paper towels to drain. Serve hot with sour cream, ketchup, or your favorite dip.
